strawberry cake

Beat together:
          1 1/2 sticks soft butter
          4 lg. eggs
          1 c. Sucanat
          1/4 c. sour cream
Mix in:
          1 c. diced strawberries & juice from them (can be fresh or frozen) 
          1 tsp. vanilla
Add in:
          2 c. Summers Sprouted Spelt or Sprouted Wheat Flour 
          3 tsp. baking powder

Turn batter into a greased and floured 9 x 13 cake pan.
Bake at 350 for 30-35 minutes or until lightly browned.

Toppings: 
 Sweeten to taste: 
          maple syrup
          2 c. kefir cheese (or sour cream or whipping cream)
 Spread on cooled cake.
 Serve with strawberries on top. (Sliced fresh or mashed and sweetened)
