jeff’s perfect spelt bread

Whip together until fully incorporated:
          6 Tbsp. dry milk
          1 1/4 c. water
          1/4 c. honey
 Mix together and whip into liquid until smooth:
          3 Tbsp. gluten flour          1 1/2 tsp. sea salt
          1/2 c. tapioca flour
 Pour into bread machine pan.
 Spread and completely cover liquid with:
          2 cups Summers Sprouted Spelt Flour 
 Sprinkle 1/8 tsp ascorbic acid powder (Vitamin C) all across the flour.
 Add and spread evenly: 
          1 1/2 c. more Summers Sprouted Spelt Flour
 Add 1 packet active dry yeast.
 Put Bread Machine on Whole Wheat Cycle, 1 1/2 lb loaf, Light Crust.
 And Enjoy!
