Whisk together until fluffy:
2 sticks soft butter or ghee
4 eggs
2/3 c. maple syrup
2 tsp. orange extract
Mix in:
3 c. Summers Organic Sprouted Wheat Flour
2 tsp. baking powder
pinch of salt
Mix in:
3/4 c. chopped crystalized ginger
3/4 c. chopped pecan pieces
Place in a greased loaf pan or 9×13 cake pan.
Bake at 350 for 35-40 minutes or until knife comes out clean.
Top with Orange Icing.
Freezes well.
