cherry cheesecake

Cream together: 
          12 oz. (1 1/2 c.) kefir cheese
          1/2 c. sour cream     2/3 c. Sucanat
          1/3 c. water                a pinch of salt
 Whip in until light and fluffy:
          3 eggs
          2 tsp. vanilla extract
          1 tsp. almond extract
 Stir in and mix well:
          1 Tbsp.  Summers Sprouted Spelt Flour
 Press 1/3-1/2 Sweet Shortbread Pie Crust recipe into a pie pan
           and chill for 30 minutes. 
 Spread bottom of crust with 1/4 inch of all-fruit cherry jam.
  Pour cheesecake batter gently on top.
  Bake at 325 for 25-30 minutes, then turn off the oven, but prop open
           the door and leave the cheesecake for another 20 minutes.
  Chill for 2-3 hours before cutting.
